Another cooking for our recipe book


yeast dough – the basic recipe
Ingredients:
-          20 g           fresh yeast
-          100 g         sugar
-          250 ml       milk
-          some         salt
-          100g          butter
-          500 g         flour
-          1                egg
Preparation:
Mix the yeast together with 1 teaspoon sugar and 5 tablespoons of milk. Give the mixture in a bowl as well as the flour.
Take the rest of the sugar, the butter and salt and give it at the side of this mixture.
Let the dough rest for about 20 minutes at a warm place.
Now mix all the ingredients in the bowl together with the rest of the lukewarm milk.
If the dough is sticky add some flour. But it should keep soft.
Let the dough rest again until is twice as much. Now knead it again.





Semolina cake
Ingredients:
-          Yeast dough (see above)
-          1,5 l           milk
-          200 g         semolina
-          100 g         sugar
-          3                eggs
-          50 g           raisin
-          1 p.            vanilla sugar

Preparation:
Cook the milk and add the semolina step by step and stir it.
Add the sugar, vanilla sugar and the raisins and let it cook for some minutes. Then take the pan from the hot plate.
Mix the egg yolk with a tablespoon of water and add it to the mixture.
Finally fold in the beaten egg white.
Now roll the dough (1cm) out and give the mixture out of semolina on the top.
Bake it for 20 minutes with 200°C.


Apple cake
Ingredients:
-          Yeast dough (see above)
-          3 kg           apples
-          500 g         flour    
-          125 g         butter
-          125 g         sugar
-                            cinnamon
-                            vanilla sugar

Preparation:
Peel the apples and slice them.
Make crumbles out the flour, sugar, butter, cinnamon and vanilla sugar.
Now roll the dough (1cm) out and the give the apples and crumbles on the top. 
Bake it for 20 minutes with 200°C.
